It's Asparagus Day, so enjoy this very healthy vegetable that contains folic acid, potassium, fiber, vitamin B6, vitamins A and C, thiamin which is also low in sodium, and contains no cholesterol or fat. Asparagus is a member of the lily family along with onions and garlic. Under ideal conditions an asparagus spear can grow 10″ in a 24-hour period. Size matters -- the thicker the diameter the better. Asparagus was considered a delicacy and was prized by the Romans and Greeks. The Greek word for stalk or shoot is asparagus. Asparagus is known to have diuretic properties, be a laxative, and even a sedative. Some people notice a strong odor in their urine after eating asparagus this may be due to a sulfur compound called a mercaptan that is in asparagus which when broken down releases a funny scent.
