Moldy Cheese Day is an odd holiday though a good excuse for eating edible moldy cheese. And yes, many cheeses you have eaten or may try are actually moldy. The most popular moldy cheeses include Roquefort Blue cheese, Gorgonzola, Blue Stilton, Briebleu, and Camembert. These cheeses have spotted, veined, or marbled mold within it which is the result of the cheese being pierced with strains of Penicillin fungi. Blue cheeses typically have a sharper saltier taste and can be crumbled on a salad or melted in food.
To prevent cheese from molding too soon it is suggested that you wrap it in wax or parchment paper, wrap in in a paper towel slightly dampened with vinegar, or shrink wrap it.
