Lamb is the oldest domesticated meat species. While not as popular a meal in the U.S. as it is in Europe, Middle East, Asia, and parts of North Africa it's become a tradition for many Christians during the Easter season. Lamb is meat from sheep less than 1 year old. It contains less fat than other red meats and is an excellent source for quality protein. Lamb has a strong flavor and may be cooked in a variety of ways. The most poplar cooking method is to roast it which makes it crispy on the outside and juicy on the inside. Lamb has been used as a sacrifice in many religions.
