About the Holiday
At first glance, Bean Day might not seem to rise to the level of being holiday-worthy, though upon further review, the often overlooked bean is quite amazing in its vast versatility. Of course there are the standard green beans, baked beans, pinto beans and chili beans. Then, there are soybeans which by themselves have a mini-universe of uses, ranging from cooking oil, animal feed, margarine, salad dressings, mayonnaise, biodiesel fuel, crayons, lubercants and even foams just to name a few. As part of our diets, beans are high in fiber, protein, complex carbohydrates, folate and iron and can help lower blood cholesterol.
