About the Holiday
This holiday encourages everyone to enjoy and eat beans. Beans are very good for you as they are full of protein, fiber, calcium, iron, potassium, folate, no saturated fat, and contain no cholesterol. Bean crops were cultivated as far back as 7000 BC in Peru and Mexico and some Egyptian tombs that date back 4000 years ago contained fava beans, garbanzo beans and lentils.
There are many beans available and many ways to prepare them. Garbanzo beans (also referred to as chick peas) are popular in the Middle East and are the main ingredient in hummus. Many chili recipes include black beans, kidney beans, or pinto beans. Many Mexican dishes include refried beans. Cannellini beans are very popular in Italian cooking. Black-eyed peas are popular in the southern part of the U.S.A.
A downfall of eating beans is that it causes a digestion process that produces flatulence-causing gases as a byproduct. Wonder if it's coincidence that Eat Beans Day is the day before the 4th of July.
