Day of the Mushroom celebrates these very low sodium, low calories, fat-free, cholesterol-free fungi we enjoy on salads, pizza, pasta, eggs, stir fry, or stuffed. Mushrooms are great sources of heart healthy copper, selenium, potassium, protein, fiber and vitamin B. They have a high water content (80-90%) so make a great diet food. Mushrooms grow from spores not seeds. There are edible mushrooms as well as toxic mushrooms. Common edible mushrooms include Shiitake, White button, Oyster, Portobello, Morel, Enoki, Cremini and Chanterelle.
