National Lemon Meringue Pie Day celebrates this sweet and tart pie that is made with a shortbread crust. The middle part is made with eggs, grated lemon rind, salt, sugar, lemon juice, water, cornstarch, vanilla extract, and flour. It is then topped with meringue which is basically beaten egg whites and sugar.
