National Sourdough Bread Day celebrates this oldest and most original form of leavened bread. It dates back to the Ancient Egyptian and even the Sumerians as far back as 2800 bc and is found in recipe books from the 17th century. The lactobacillus bacteria used produces lactic acid which causes the sour taste. It's diabetic friendly because of the low glycemic index (it doesn't spike blood sugar). The most poplar sourdough bread is made in San Francisco at Boudin Bakery.
Foods that go well with sourdough bread include butter, brie cheese, grapes, spinach dip, Dungeness crab, carved out as a soup bowl, or as a sandwich.
