National White Chocolate Day celebrates the chocolate that many people don't even consider to be chocolate -- which until 2004 included the U.S. Food and Drug Administration. This is because white chocolate has cocoa butter (extracted from the cocoa beans during the chocolate making process), but does not contain cocoa powder.
Regardless of it's official classification, true white chocolate is an undeniably enjoyable flavor. We emphasize the true white chocolate because there is imitation white chocolate on the market that uses vegetable oil instead of the cocoa butter, and simply put, just isn't as good as the original. On this holiday, celebrate by treating yourself (and others) to authentic white chocolate.
