It's probably no coincidence that Eat Your Vegetables Day falls in the middle of "National Fresh Fruits and Vegetables Month". It's a perfect day to re-introduce healthy vegetables into your daily diet. The USDA (United States Department of Agriculture) recommends 2-3 cups a day and further breaks down, per week, how many of what kinds you should be eating.
Vegetables are great to eat because they are low in fat and calories, high in essential nutrients, fiber, and typically cost less than meat. Vegetables can be eaten raw, steamed, sauteed, or roasted. Per the USDA the most commonly eaten vegetables are potatoes and tomatoes followed by corn, onions and lettuce.
